While using the new (super cool) experience training feature I noticed that the modify option (wand icon) for Featured Snippets is sometimes grayed out.
What is the reasoning behind that?

Hi Max,
Great question - currently Rich Text Featured Snippets cannot be modified via Experience Training. So for any rich text snippets, the wand will be grayed out and you will only be able to click on the buttons to approve or reject it.
Also, just a note if you ever encounter another button that may be grayed out in the platform - hovering over the grayed-out wand icon will also display a tool-tip for this as well:
